Mint Chocolate Chip Chia Seed Pudding

I love food. I love cooking it, baking it, eating it, and experimenting with it.

I love trying new foods – especially if they promote a healthy lifestyle. About 6 months ago, I gave in and decided to give chia seeds a try. I was apprehensive, as I knew they expanded in liquid, which seemed weird to me. But once I tried them, I was hooked. I use them on oatmeal, in smoothies, in drinks, and absolutely love making pudding out of them. This is, to date, my favorite chia seed recipe I’ve made yet.

This recipe is just enough for 2 servings – a perfect size to give it a try!


  • 1/2 c. chia seeds
  • 1.25 c. unsweetened vanilla almond milk
  • 3 tbsp. cocoa powder
  • 1.5 tbsp. agave
  • 1/2 c. organic dark chocolate chips
  • 1/2 tsp peppermint extract
  • 1 tsp. vanilla extract

Combine chia seeds and almond milk. Stir in cocoa powder, agave, peppermint extract, and vanilla extract. Let sit for 30 minutes or overnight until mixture has thickened. Add chocolate chips just before serving.
